Step 1: Mix Dry Ingredients
- In a large mixing bowl, combine oats, ground flaxseed, and any optional add-ins (like coconut or protein powder).
Step 2: Add Wet Ingredients
- Stir in peanut butter, honey (or maple syrup), and vanilla extract. Mix until everything is well combined.
Step 3: Fold in Chocolate Chips
- Add mini chocolate chips (or dried fruits/nuts) and mix gently. If the mixture feels too dry, add a little more nut butter or honey.
Step 4: Chill the Mixture
- Place the bowl in the refrigerator for about 20–30 minutes. This makes the mixture firmer and easier to roll.
Step 5: Roll into Bites
- Once chilled, scoop about 1 tablespoon of mixture and roll it into small balls using your hands.
Step 6: Store
- Store energy bites in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
