Energy Bites

Ingredients
  

  • 1 cup rolled oats
  • ½ cup natural peanut butter or almond butter
  • cup honey or maple syrup
  • ½ cup ground flaxseed or chia seeds
  • ½ cup mini chocolate chips optional
  • 1 tsp vanilla extract
  • Pinch of salt if nut butter is unsalted
  • Optional add-ins: shredded coconut dried cranberries, chopped nuts, or protein powder.

Method
 

Step 1: Mix Dry Ingredients
  1. In a large mixing bowl, combine oats, ground flaxseed, and any optional add-ins (like coconut or protein powder).
Step 2: Add Wet Ingredients
  1. Stir in peanut butter, honey (or maple syrup), and vanilla extract. Mix until everything is well combined.
Step 3: Fold in Chocolate Chips
  1. Add mini chocolate chips (or dried fruits/nuts) and mix gently. If the mixture feels too dry, add a little more nut butter or honey.
Step 4: Chill the Mixture
  1. Place the bowl in the refrigerator for about 20–30 minutes. This makes the mixture firmer and easier to roll.
Step 5: Roll into Bites
  1. Once chilled, scoop about 1 tablespoon of mixture and roll it into small balls using your hands.
Step 6: Store
  1. Store energy bites in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
